The Kermit Eggplant

 

The Kermit is a vigorous and prolific variety of eggplant. Its fruit is round and creamy-green in color, 50-80g in weight. Eggplant is often used in vegetarian meals as a replacement for meat. In Thai cuisine, it is commonly used in curries, noodle, veggie, and rice dishes. Also, it is a great choice for those watching their weight since it is very low in calories. They are great grilled, stir fried, pickled or made into a relish combined with diced tomato, tahini and fresh parsley served over fish.
